Tropical Muesli Slice

125g butter, chopped
1/3 cup Capilano Honey
1/3 cup firmly packed brown sugar
1/4 cup self raising flour
1 teaspoon ground ginger
1 1/2 teaspoons ground cinnamon
1 1/2 cups natural muesli (untoasted)
1 cup chopped dried mango
1/2 cup chopped macadamia nuts
1/3 cup desiccated coconut
- 1Preheat oven to 1700C. Grease and line a 20cm x 30 cm slice pan with non-stick baking paper, leaving a 5cm overhang along the long sides.
- 2Place butter, honey and brown sugar into a saucepan over a moderate heat. Stir occasionally until butter melts. Set aside to cool slightly.
- 3Sift flour and spices into a large bowl. Add muesli, mango, macadamia nuts and coconut and stir to combine. Add honey mixture and mix well. Press firmly into prepared pan. Bake 20 minutes or until golden brown. Cool to room temperature, then cover and refrigerate until firm. Cut into slices. Store in an airtight container in the refrigerator for up to 1 week.
